Palaka with Amplaya

Frog is one of the most exciting, fun, and healthy exotic foods. In the Philippines, Ilocanos and other groups of people have their different version of this.

INGREDIENT

4 Big Frogs
2 Medium-sized Tomatoes
5 pcs. Medium-sized Amplaya/Bitter Gourd
1 Medium-sized Onion
5 Cloves of Garlic
1/2 tsp Ground Blak Pepper
1/4 Cup Ginger
5 tsp Fish Sauce
1/2 - 2 Bowls of Water
Oil

PROCEDURE:

1. Frog must be cleaned well. After peeling off, rub the frog with enough amount of salt, prepare boiling water then pour it directly unto the frog.
2. Chop ingredient as seen on the photo above.
3. Prepare the cooking pan, once hot, put enough amount of cooking oil.
4. Add in ginger, garlic, and onion respectively.
5. Then, add in the frog. Sauteing is the secret to a tasty "Palaka with Amplaya". In after some minutes, season with a pinch of salt and 1/2 tsp of ground black pepper.
6. Add tomato in.
7. Once tomatoes are cooked, add 1/2-2 bowls of water.  
8. Let it simmer.
9. Lastly, add in the chopped ampalaya/bitter gourd. 
10. Serve and enjoy!
